The picol (or „runner” in American terminology) backs up the waiter at high-volume events: shuttles platters from the kitchen, clears tables fast, paces the meal, refills water and bread. 32 active candidates — many are also junior waiters using the picol role to build experience. For permanent restaurant and hotel runners, employers recruit directly through the PHE platform.

What a runner does

The picol is the „invisible member” of the service team. The waiter takes orders, recommends wine, serves at table — the picol handles the rest. Without picoli at large events, waiters are forced to do everything: the meal's pacing breaks, guests wait, the experience degrades. Above 150 guests, the picol is not optional — it's required. Vs. waiter: the picol does NOT take orders, does NOT recommend wine, does NOT collect payment — the role is operational, with no protocol or prior-experience requirements.

Picol is an entry-level role (no senior tier). After 6–12 months of solid experience, good candidates move into junior waiter roles — rates then align with the waiter table. Rates are indicative; PHE configures per client.

How it works for runners

    Within 48h we propose 1–4 runners, depending on the waiter team size. Many are also junior waiters — a flexibility bonus if needed.

    For recurring events (venues, beach clubs), we build a relationship with specific runners who know your flow.

  4. 04Sign and invoice

    Service contract with PHE invoice + VAT. For permanent restaurant roles, the employer recruits directly through the platform.

FAQ — runners

What's the difference between a runner and a waiter?+

The waiter takes orders, recommends menu and wine, serves at table, takes payment — requires at least 1 year of experience plus service protocol. The runner does not take orders, does not advise, does not collect payment — the role is operational (platter transport, clearing, refills, mise en place). Entry-level, no prior experience required. 8h event rate: waiter 400–650 RON, runner 250–400 RON.

Difference between „picol” and „runner”?+

Full synonyms. „Picol” is the traditional Romanian term (from Italian / French); „runner” is the American term used in modern restaurants and international hotels. Many Bucharest restaurants list „runner” on their org charts, but the role is identical.

Do I need runners for a 100-guest wedding?+

Not required. For 100 guests with 4 waiters, a runner is optional — it improves pacing but isn't essential. Becomes essential from 150+ guests.

How much for a runner on an 8-hour wedding?+

250–400 RON for a standard Bucharest wedding, depending on experience. For 10–12h weddings the rate scales proportionally. VAT on invoice.

Can runners progress to waiter?+

Yes — and it's the recommended path for young people entering the industry. We give structured feedback after each event. After 6–12 months of solid runner performance, the candidate moves to a junior waiter role.

Do runners wear a different uniform from waiters?+

Generally no — the same standard black uniform (trousers, white shirt, apron). The difference is functional, not visual.

Do you have runners for permanent restaurant roles?+

Yes. For permanent restaurant and hotel runners, the employer recruits directly through the PHE platform — post the job, receive applications from verified runners. Market norms for permanent placement: 1.0–1.5× one month's gross salary, lower than for waiters because the role has fewer requirements.

I have no experience — can I be a runner?+

Yes. Picol is the entry-level role in HoReCa, no prior experience required. We ask for: tidy appearance, willingness to work on your feet, physical capacity to carry trays (3–5 kg), learning attitude. Registration is free.
